Have made this several times and I must say the carmelized tomato on top makes it! The acidity really cuts the richness of the cheese. In summer, splurge for a market or heirloom tomato - well worth the price. Also, I used a different shape pasta - Pipe Rigate (organic from Whole Foods). This is zesty, tart - great for those who think the typical cranberry at Thanksgiving is too sweet. If you cut the recipe in half, it works perfectly for one 12 oz. bag of cranberries.
