I still don't see why people claim this recipe was "bland," "no flavor,"- You NEED to use whole, fresh ingredients to get the taste Guy is after. Then you tweek the recipe to your taste using the amount of salt, pepper, and "seasonings" you like. Have made this several times and I must say the carmelized tomato on top makes it! The acidity really cuts the richness of the cheese. In summer, splurge for a market or heirloom tomato - well worth the price. Also, I used a different shape pasta - Pipe Rigate (organic from Whole Foods). This is zesty, tart - great for those who think the typical cranberry at Thanksgiving is too sweet. If you cut the recipe in half, it works perfectly for one 12 oz. bag of cranberries. If you're getting a bitter taste, perhaps you are getting some of the pith when zesting the orange or lime. I omitted the zest, and it was delicious. I am always careful...
