I used coconut palm sugar in place of white or confectioner's sugar for the lower glycemic index. I replaced 1 to 1 but the coconut palm sugar does seem to absorb more liquid so reduced cooking time is a MUST, I cooked for 10 mins but still wasn't gooey enough. I would reduce to 8 mins. I replaced 1/2 c of rye flour as I find it compliments the ch"
