Super simple, just prep your veggies and drop. I did a few substitutions with soy beans, kale and cauliflower in place of of the other veggies and it turned out great. Goes to show that you can use a variety of veggies with the same technique for great results.

Added bacon with the sausage and used scrambled eggs and it was great. There was a little left over which stood up to re-heating the next day. If in a rush, you could use salsa from a jar and skip the tomato/jalapeno/onion part. I will make this again and again."

At first I thought this was going to be just a glorified omelet. However, once I started baking it, the smell told me I would be in for a treat. The eggs were fluffy and the the taste was surprisingly savory. It makes enough for leftovers. Next time I'll add bell peppers for color and crunch. "

This is a great recipe. The only change I made was to use 1/2 a red and 1/2 a yellow bell pepper since using the whole thing of each seemed like too much. I would make extra glaze next time since it was so delicious. I served it with a sweet potato and cauliflower mash. ""

The sauce was great. I used ground beef instead of sirloin, and it was fine. I really love the idea of tossing the pasta in the ricotta and boiling water. I look forward to trying this technique again in other pasta recipes. "
