my main thought was the fact that so many people liked to use tilapia because it is cheap. there is a reason why it is less money. It is farm raised by the millions and is farmed in the Asian countries. if you are going to the trouble to make this dish use a quality fish. halibut is rather expensive but there are lots that don't cost so much....
