Not real hot and sour soup. The soup gets its unique flavor from vinegar, not lime juice, and benefits from the addition of interesting items like bamboo shoots and tree ears, a dried fungus used frequently in Asian cooking. And although the hot chili oil makes a lovely presentation, try using lots of freshly ground black pepper in the soup instead....

I'm perplexed by the few bad ratings. Taste is everything. If the marinade tastes too vinegary, add more wine, olive oil or other liquid. Even beef stock. Sorry that good recipes are trashed by inexperienced cooks. Personally I use more wine than vinegar although my husband loves this recipe as is. Remember, recipes are guides, not rules."
