I've made this twice and this is now my go-to meatloaf recipe. I use Organic Ground Turkey (dark meat) instead of beef/pork. I made this for my boyfriends Birthday as he asked me for a more traditional style carrot cake with out the pineapple. The only thing I would change is that I would try using Whole Wheat Pastry flour instead of the whole wheat all purpose flour I used. The cake tasted wonderful but it was a bit too dense. Wonderful Recipe, plus extremely healthy! I used white wine vinegar instead of red wine, plus I added a pinch of Cumin. It does yield a lot of extra lentils but great for the rest of the week or to make a soup with. I will most definitely make this again. ""
