I've made this twice and this is now my go-to meatloaf recipe. I use Organic Ground Turkey (dark meat) instead of beef/pork. I made this for my boyfriends Birthday as he asked me for a more traditional style carrot cake with out the pineapple. Wonderful Recipe, plus extremely healthy! I used white wine vinegar instead of red wine, plus I added a pinch of Cumin. It does yield a lot of extra lentils but great for the rest of the week or to make a soup with. I will most definitely make this again. ""
