There is nothing better than pork with apples and prunes. I usually just cut slits in the roast and alternate stuffing the slits with apple slices and prunes, This sounds like and easier preparation and I will try it tomorrow. I'll make the stuffing tonight and freeze it over night."

The idea is great but the shrimp are lost in the vegetables. I diced mine when I made this a second time and they were much tastier. Didn't use the dip either time, it just didn't sound like a good combination

I made this recipe for a crowd, doubling the ingredients and using two large crock pots. It could not have been better,everyone commented on how deliciousit was. I put the peppers on top of the meat rather than on the bottom and cooked according to Sandras instructions. I think if other people had problems they may have set their crockpots on high...
